shrimp mango quesadillas

I took pictures of these tonight, but my memory card was NOT in the camera.  Click here for a picture from the recipe's source.

I'm a mango fan.  And a shrimp fan.  But the thought of them in a quesadilla (tossed in honey!) had me worried.  But dang these were good.  The recipe comes from Downright Delish, a food blog I recently discovered and linked on my side bar.  The only thing I changed was to add cilantro & I think I'll saute some red onion in extra butter before cooking the shrimp next time.  Definitely delish!

Fettuccine with Shrimp, Tomatoes and Basil

This was Mandi's birthday dinner of choice today.  I originally found the recipe on the back of a pasta package and wish I could take a picture that did it justice.  It's one of those dinners that looks gourmet, is fabulously delicious, but comes together in about 10-15 minutes.

Tuna Summer Rolls

Okay, I'm obviously on a Cooking Light kick.  And a seafood kick, too, I suppose.  But this is another delicious recipe.  I'm a huge fan of the Asian flavors of the dish & just thought it was refreshingly good.   I substituted arugula for watercress (couldn't find it).

Coconut Shrimp with Pineapple Salsa Sauce

We had this tonight and I was crazy about the flavors.  I served it over rice.  And made the salsa into more of a sauce by blending most of it, then combining it with the unblended for a little more texture.  Sooooo good!  This recipe is definitely one to repeat.  I would also delight in this as an Appetizer.  All of the shrimp bakes at once in the oven so it's quite simple.

Fish Tacos, Black Bean Salsa & Mango Pico de Gallo

If by random circumstance I had to choose one meal to eat for the rest of my life, this would be it.  The smell of the salsas alone does me in.  I included this in the APPETIZER category as well because the salsa & pico de gallo are great with any tortilla chips.

Gnocchi with Shrimp, Asparagus and Pesto

In an attempt to eat healthier, I've been searching out new recipes.  This one was so full of ingredients that I enjoy.  It's from Cooking Light.  And I loved it.  Even Davyn ate it up readily.  As a bonus, it was a very quick & easy dinner.  Up until a few years ago, I refused to prepare shrimp at home.  Now shrimp dishes are my favorite options on busy nights.  So easy to make!

Halibut with Creamy Dijon Sauce

This is our favorite recipe for halibut steaks.  And I love the presentation on top of the spinach greens because it seems far more elegant than a typical dinner that can be made within 20 minutes.
