Roasted Garlic Hummus
I've always been a hummus fan, but never really thought about making my own. Now that I've done it though, I don't know why I'd ever buy it pre-made. With a food processor or a good blender, it takes next to no time to get the job done. And it's very fresh & tasty!
I found this recipe a while back, but never made it because I could never find tahini at the grocery store. I finally got some at Sprouts, and I'm sure it could also be found at Trader Joe's. Look next to the peanut butter and other similar products.
INGREDIENTS
- 5 unpeeled garlic cloves
- 1 tablespoon extra-virgin olive oil
- 1 (15 ounce) can garbanzo beans, drained
- 1/2 cup tahini
- 1/3 cup fresh lemon juice
- 1 teaspoon ground cumin
- 1 teaspoon salt
- 1 tablespoon extra-virgin olive oil
DIRECTIONS
- Preheat oven to 450 degrees F (230 degrees C).
- Place unpeeled garlic cloves in the middle of a large square of aluminum foil. Drizzle cloves with 1 tablespoon of olive oil; wrap in foil. Roast in preheated oven for 10 to 15 minutes until golden brown. Remove from the oven, and allow to cool. When slightly cooled, squeeze roasted garlic out of peels.
- Combine roasted garlic, garbanzo beans, tahini, lemon juice, cumin, salt, and the remaining 1 tablespoon olive oil in the work bowl of a food processor. Process until very creamy.
I love hummus with Melba Crackers or pita bread. My favorite is probably spreading some inside a pita, then adding cucumbers and turkey. Makes a good, quick, healthy lunch.
