Whole Grain Waffles

I photographed these waffles without butter & syrup because Megan claimed they were good enough to eat plain.  And I do agree.  They have oats and whole wheat flour, so you can even avoid the guilt that most good breakfast foods bring.  I've never been much of a waffle girl myself, but these pushed me over the edge and "waffle iron" is now on my "need" list.

1/2 C. flour
3/4 C. whole wheat flour
1/2 C. quick-cooking oats
3 t. baking powder
1 T. sugar
1 1/2 C. soy milk (Megs' note to JoDee & I: you can use regular milk since I already know you don't have soy)
2 T. vegetable oil
1 egg

Mix together and and pour 1 cup into waffle iron. They cook a little bit longer than normal waffles, at least for me they need to. Enjoy!!

This is very close to my regular waffle recipe--except mine just has all white flour. I love the idea of the flour mix. I'm sure they're good!
